PARSNIP CHIPS FOR A HOLIDAY SNACK

While working on my December issue, I took my laptop down to my kitchen and whipped up this mid-day snack of baked parsnip chips. On the list of "healing" foods, parsnips are packed with nutrients and cooked this way seem more like a treat than a veggie.

Ingredients

Fresh parsnips (one large is enough for a light snack for two but if you've really got the munchies use one parsnip per person)

Olive oil

Mineral salt (I used Pink Himalayan Salt)

Method

Wash parsnips (I peeled, but that's optional)

Slice crosswise into very thin slices

Set slices on cookie or pizza pan

Brush with oil

Sprinkled with salt

Set in 300 degree for about 20 minutes or until brown.

Turn over and brown the other side.

The thinner the slice the more quickly they cook (and burn) so watch carefully.

Remove from oven when they are browned to your liking and serve.
