Lemon Raspberry Chia Seed Pudding

Chia seeds are an excellent source of omega-3 fatty acids, they’re rich in antioxidants, and they provide fiber, iron, and calcium. In this delicious dessert recipe, they plump up slightly and help to thicken the pudding. (Omit the optional honey and yogurt to make this vegan.)

Ingredients

1-1/4 cup fresh or frozen raspberries

1 cup coconut, cashew, or almond milk

2T mild honey (optional)

½ lemon, juice and zest

1-1/2 T plain Greek yogurt (optional)

¼ cup chia seeds

Extra raspberries for garnish

Puree all of the ingredients (except chia seeds and extra raspberries). Stir in the chia seeds and pour the mixture into two glasses. Cover the glasses with plastic wrap and refrigerate for one to two hours, or as long as overnight. Garnish with extra raspberries and enjoy.
