Ingredients
1 medium green pepper
1 medium yellow pepper
1 medium red pepper
1/2 large white onion
1 medium green zucchini
2 tbsp olive oil
2 cloves fresh garlic - finely chopped
1 tbsp dried mixed Italian herba
salt & pepper - to tast
6 large soft tortillas
1/2 cup mayonnaise
1/2 cup cream cheese
1 cup alfalfa sprouts
6 dill pickles
Method
o Clean and seed peppers, slice into large strips
o Cut onion into strips
o Slice zucchini into three and then cut each piece in half lengthwise
o Place all veggies in a large bowl and mix in the garlic, dried herbs, olive oil, salt and pepper
o Preheat the grill to medium-high; grill vegetable mixture on both sides. (Place veggies on a parchment paper-lined tray if you wish to reheat.)
o spread mayonnaise and cream cheese over the tortillas; place grilled veggie mixture in the centre and fold
o Cut the tortilla in half and serve garnished with alfalfa sprouts and a dill pickle cut into a fan.
