Recipe yields approximately 20 cookies
INGREDIENTS:
1/2 cup Unsalted butter
1/4 cup Brown sugar
1 tsp Molasses
2 Eggs (large)
1 3/4 cups All purpose flour
1 tsp Baking powder
1/2 cup Dried figs, finely chopped
2.5 cups Grated coconut
METHOD:
Pre-heat oven to 300F.
In a mixing bowl using the paddle attachment at medium speed, combine together the butter, sugar and molasses. Blend well and reduce to lower speed.
Add the eggs one-by-one while mixing properly in between each addition.
Add the flour and baking powder to the mixture, and keep stirring for 3 to 4 minutes at medium speed.
Add the figs and coconut, mix all together until you obtain a smooth consistency.
Place the batter on a greased cookie sheet using a small ice cream scoop.
Place in pre-heated oven and cook for about 15 to 20 min or until golden brown.
